Chopped Cobb Salad

This single-serving Cobb salad recipe offers a protein-packed lunch option by substituting chicken for bacon. Ingredients

  • 3 cups of chopped iceberg lettuce

  • 1 diced roasted chicken thigh

  • 1 diced stalk celery

  • 1 diced carrot

  • 1 diced hard-boiled egg

  • 1 tablespoon of crumbled blue cheese

  • 2 tablespoons of honey-mustard vinaigrette

Preparation
